Injera is the cornerstone of Ethiopian Cuisine, and its quality dictates the overall taste of the dishes that are eaten with it.

Fassica's injera, is 99% Teff as Ethiopian culinary custom dictates and unlike other restaurants that use Flour mixed with Teff. The other 1% is self rising yeast; mainly a spoon full of teff batter from the last mix... similar to the way sour dough cookies.
